Coconut Lime Margaritas
Since we’re all stuck at home in quarantine and can’t realistically be lounging at some far away beach drinking our worries away… I thought this twist on a classic marg would help lift our spirits. We can all dream, right? If you put on some tropical tunes, your floppiest sun hat, and venture to the backyard, this cocktail will do the rest — transporting you to your happy place one sip at a time.
What You Need:
1 cup of coconut milk (unsweetened) OR 1 tbsp coconut cream
Lime juice (2 limes)
1.5 shots tequila
.5 shot of Cointreau
2 tbsp simple syrup or agave
Sea salt & sugar for the rim
Ice
Make It Happen:
Mix equal parts sugar, salt, and lime zest on a paper plate.
Take the zested lime and rub along the rim of the glass, then coat the juiced rim in the salt, sugar, zest mixuture — set aside.
In a cocktail shaker or a blender combine the coconut milk, lime juice, tequila, Cointreau, and simple syrup (and ice if you’re using a blender)
Shake or blend thoroughly then add to your glass and enjoy!
