Creamy Dreamy Truffle Parm Mashies
#CookingforCorona continued: over the weekend I kept it pretty simple and classic — strategically using up produce and pantry items that had a ticking expiration date. Friday night flaunted pasta with jar sauce topped with sauteed cherry tomatoes and grated parm. And Saturday’s meal was straight from the 70s with a personal twist (some of the best, most comforting types of dinners). I really just wanted to highlight these mashed potatoes that elevate any mashed potato experience you’ve ever had (bold statement, I know). These are the creamiest, dreamiest, cloud-like mashies with a classic-yet-sophisticated flavor. Check it out.
What You Need:
2 russet potatoes (KEY: 1 russet potato per person you’re serving — I only serve 2 so you may need to slightly adjust measurements below if you have a larger crowd)
1/2 cup heavy cream or half and half
1 tsp truffle salt
Fresh cracked black pepper to taste
2 tbsp butter
1/2 cup fresh grated parmesan
Make It Happen:
Rinse and peel potatoes and cut into large chunks (this helps them cook faster)
For Instant Pot: Add just over 1/2 cup of water and set potatoes on steamer basket. Close lid, turn off vent, and pressure cook on high for 10 minutes. (May need to cook for longer if using more potatoes). Use the rapid release valve when the timer is up.
For stovetop: Place potatoes in large pot or sauce pan and add cold water until covered. Bring to a boil with a 4-finger pinch of salt. Once you’ve reached a rolling boil, reduce heat to low or medium-low and simmer until tender (about 15 minutes).
Once your potatoes are soft and tender, remove from cooking device and drain excess water through a colander. Also rid the pot of any remaining water. Return potatoes to pot.
Using either a fork or a masher, mash the potatoes until roughly blended and chunky.
Add the cream, butter, parm, truffle salt, and cracked pepper.
Now, using a hand-held electric mixer, whip the mixture together until smooth and fluffy. This is the ticket to the cloud-like texture.
Serve immediately and enjoy!!
