Superbowl Snax
Superbowl Sunday is one of two days out of the year that it is perfectly acceptable to do nothing besides cook bottomless snackies and drink mimosas all day (Thanksgiving is the other - obvi - but the Superbowl menu is much scrappier and I love that). So, if you’re feeling stuck on what your lineup will look like this Sunday, look no further… Here are a few of my game day faves:
Warm Parmy Artichoke Dip
I love a cool creamy spinach dip, don’t get me wrong. But this warm version of the classic app has it all: Creaminess, crispy buttery top, rich flavors, all with a lemony twist. And the best part is, it’s uber easy. Mix equal parts ricotta and cream cheese, with the juice of half a lemon, chopped artichoke hearts, a cup of fresh parm, (and chopped spinach if you want it, but it’s also good without), salt/pepp, garlic, and chili flakes in a glass pie dish or cast iron. Top with toasty bread crumbs and more parm, then drizzle with butter before popping in the oven for about 15 mins. I love dipping bagel crisps or french bread crostinis in it, but tortilla chips or even a good ole ritz cracker is also just as good.
Buffalo Chicken Sliders
It’s really not any kind of game day without something smothered in buffalo sauce. These snackable sammies are bite-sized and oh-so-cravable. Plus, we love a set-it-and-forget-it style dish. All you gotta do is add chicken breast, buffalo sauce, cream cheese, and some seasoning to your slow cooker for about 4 hours — prep it in the morning and they’ll be ready just in time for kick off! I love them with shredded cabbage, green onions, and dill ranch! Simply delish.
Cauli-Wingz
Whether or not you eat meat, cauliflower wings are a crispy-and-delicious alternative. They’re easier and quicker to make, plus you’ll be surprised at how much they really do… well, taste like chicken. Once you batter and fry ‘em up, you can get just a creative with that sawce. Lemon pepper, garlic parm, sweet heat, oh my! Serve with a side of ranch, carrot sticks, the whole nine. I promise they’ll score a touchdown no matter who you’re serving.
Deviled Eggs
I mean… really, need I say more? If deviled eggs aren’t apart of your game day spread, what are you doing?! There’s nothing not to love. And my smoky Texas-style take on these bad boys are to die for - hehe get it.. “deviled” eggs - to die… okay, moving on. If you really wanna ~WoW tHe CrOwD~ and go for the extra point ;) puns out of control - bread them and pop em in the air fryer before adding the filling. YOM!
Gourmet Sweet Potato “Nachos”
Take your appetizer game up a “nacho” (I can’t stop) with these crispy sweet potato rounds topped with tangy goat cheese, sweet pomegranate seeds, salty walnuts, fresh mint, honey, and black pepper to round it out. If you have an air fryer, these can be done in like 15 minutes or less, but are also doable in the oven! Feel free to make them your own by swapping out the goat cheese with brie or using another favorite fruit if poms aren’t ya thang. The most fun part is getting creative!
